Brew Guide:
Best Brewed with: Filter/Turbo Espresso/Soup
Lightest Roaster Influence: since the brief was for a clean/close to washed coffee, we found this to be an excellently processed lot with minimal fermentation notes - but we've still deployed our typical funk-minimising approach to keep it whistle clean. A softer start and lower overall gas too as it's a touch on the lower side altitude wise.
Best Rested: 5+ weeks
Filter: 64g/L, 92°C when fresh; 90°C when rested
Espresso: 18g/50g/22-26s
We're tasting: Sweet floral aromatics of cherry blossom and dried rose petals. In the cup we find raspberry jam, oolong, kumquat acidity and distinct floral honey sweetness, with a vanilla custard and sweet pastry note that reminds us of mille-feuille. As it cools the citrus & florals evolves to earl grey tea

The Story
Hyunah has swiftly risen to be amongst our favourite people to work with in the US, as both lovely people and and a wonderful concept. We love the community aspect they foster as part of their ethos, which is totally aligned with our values - what Kate and Hafiz created is something truly unique, and echoes a lot of why Scenery started.
Having a space that allows absolutely anyone to connect and learn about coffee, in a completely inclusive and supportive environment, only lifts our industry up as a whole. Hyunah is not a café, but a social club for coffee lovers offering a chance to try out new coffees, equipment and techniques amongst likeminded friends. In a world where we see an increasing lack of third spaces and chances for offline connections, we're all for concepts like Hyunah.
We've found that we are well calibrated for the sort of coffees we like, and it's been a pleasure to work together. So when they reached out and offered us the chance to go visit, hang out with the members of the club and celebrate the partnership alongside a collab coffee, we were stoked to jump on it. Being able to share what we do at Scenery, and the coffee we work with, alongside the members of Hyunah was a really special moment for Dan and Stu.
We feel truly honoured to have been able to share this experience, and we’re super excited to be able to share this coffee on our side of the pond.
Millo Verde & Finca Vista Linda
Millo Verde is a relatively new farm located in Boquete, founded in 2018 and lead by Álvaro Heilbron. Focused on speciality production and microlots, the farm grows Gesha, Pacamara, Catuaí, and a Typica/Gesha cross they call "Millo". Beyond growing and processing their own lots, the farm has the intention to collaborate and provide quality control, milling/processing/agronomic advice & support, international market access and promotion for friends, aiming to make Millo Verde a recognised brand for quality. One such collaboration is with Jorge Rivera's Finca Vista Linda, located in the neighbouring El Salto region of Boquete. El Salto is considerably drier than Millo Verde's region of Jaramillo, which makes it eminently suitable for the processing of natural (sun dried, in cherry) coffees. Hot, dry weather with thin bed depth and frequent turning is perfect for drying natural coffees, and we think this lot is super clean and delightful.
